Recipe by Laura Black
- Peel 2 sweet potatoes and Steam or bake to fork-tender and place in large bowl
- Add 1/4 cup coconut milk and TBSP of ghee butter
- Add 1/4 cup Ricante Tropical Mango Coco sauce
- Add tsp sea salt
- Blend with a hand mixer to desired consistency.
Add more sauce and coconut milk to desired consistency. Garnish with chopped green onion . Enjoy!
